Yesterday, it was warm enough for 1 inch of the snow to melt. However, tomorrow we're suppose to get 10 cm and the day after 20-25 cm more.....ARRGH!!

I can't wait for spring. I like snow, but we're running out of room to put it all. We had to shovel a path for my dog in the backyard because the snow is almost pass the top of the fence. It looks like the grand canyon.

I don't even want to think how much flooding there's going to be this year. -_-; Thankfully, our house is on top of the hill, but I feel bad for the people who live near the river. That's a big worry I rather not have.

Anyway, I finally got around to posting my family's cheese fondue recipe. I've lost count how many times I've made this. My friends love it.



Broccoli Cheese Fondue


2 cups of chopped broccoli, cooked (I use frozen, boil and drain it well and chop it up)

1 medium onion, finely chopped

2 cans of cream of mushroom soup

½ cup of butter

450 gm package of Velveeta cheese (cut into cubes to melt it faster)

3 cloves of garlic, crushed


Sauté onion and garlic in butter. Add soup and cheese and stir constantly over medium heat, just until all melted. Remove from heat. Add broccoli. (You can make it ahead and refrigerate it at this point) Reheat on top of stove and put in fondue pot or slow cooker and serve warm with cubes of French bread or raw vegetables for dunking. Delicious!!



And a bonus since I realize that my mother had already typed this up on the computer. These are really good squares, it's a nice combination of chocolate, peanut butter and cocoanut.



MAGIC SQUARES


½ cup of margarine—melted
1 and ½ cups of graham wafer crumbs
1 can (300 ml) of sweetened condensed milk
1 cup of milk chocolate chips
1 cup of peanut butter chips
1 cup of flaked cocoanut


Line bottom and sides of a 9 by 13 pan with parchment paper. Melt margarine and add graham crumbs. Mix and press into bottom of pan, on top of parchment paper. Drizzle 2/3 of the can of condensed milk over crumbs so all crumbs are covered. Sprinkle chips and cocoanut over base and press down. Drizzle remaining condensed milk over top. Bake in 350 degree oven for 25 minutes. Cool and cut into squares. Freeze really well.
