Well, overall I had a good birthday. My mom treated me to lunch and then for supper we had chicken carbonera and peanut butter cake for dessert. Yum! My brother got me the 101 Dalmations DVD that I wanted and my mother gave me the boxset ofPetite Princess Yucie A very good anime that needs more love.
As promised, here my mother's recipe for her peanut butter cake
Peanut Butter Cake with Peanut Butter Icing
Peanut Butter Cake
Ingredients:
2/3 cup peanut butter
1 1/4 cup white sugar
3 beaten eggs
3 tsp. Baking powder
2 tsp. Salt
1 tsp. Vanilla
3/4 cup milk
2 cups flour
mix together peanut butter and sugar. Add eggs. Add rest of ingredients. Bake in greased 9 x 13 pan at 350° for 30 minutes.
*Note: Use Mixer
Peanut Butter Icing
Ingredients:
1 1/3 (1 package) peanut butter chips
4 tbsp. Peanut butter
4 tbsp. Milk
2 2 cup icing sugar.
Melt peanut butter chips. Stir in peanut butter and milk until melted and blended together. Let it cool a bit. Then use a mixer and beat in icing sugar. Add 3-4 more tbsp of milk until there is a nice consistency for icing.
NOTE: I've haven't tried it myself, but I imagine that using chocolate icing instead of peanut butter icing would also be very tasty for this recipe. It's chocolate and peanut butter, how could it not? ^_~
