Later, I plan to dig out the photos off my digital camera. However, I thought I would post this while I thought of it.

The recipe for cappuccino cookies



Cappuccino Cookies

2 tablespoons of instant coffee
2 tablespoons of milk

Heat milk and add instant coffee, stirring until coffee is dissolved.

1 cup butter or margarine, softened
2 cups brown sugar
2 eggs
1 tsp. rum extract
1 tsp. vanilla
1 tsp. baking powder
½ tsp. nutmeg
¼ tsp. salt
4 cups flour

Chocolate sprinkles or melted semi-sweet chocolate chips (optional)

Dissolve instant coffee in milk. Cream butter and sugar, add milk mixture and all other ingredients. Roll dough into 2 logs, and roll each log in ½ cup of chocolate sprinkles, if desired, or leave plain for future dipping in melted chocolate. Wrap each log in plastic wrap and refrigerate for 5 hours or overnight. Unwrap dough and slice into ¼ inch slices. Place on baking sheet and bake at 375 degrees for 13 minutes.
Once plain cookies cool, dip cookie so that half of it is coated with melted chocolate, if desired. Place on wax paper lined cookie sheets and chill until chocolate is firm.
Makes 4 to 5 dozen.

Note: I found for heating the milk, it's easier to put it into a coffee mug and then heat it into the mircowave. ^_~


Also, is it wrong that I'm already thinking of places to take you guys if everyone does come to New Brunswick next year? XD

Ooh, that's great, thanks! I already know how tasty they are, too. ~.^ *ponders* You know, I bet they'd be really good if they were mixed with cocoa powder or melted chocolate before baking...Mm, mocha cookies...XD Oh, and that reminds me that I still need to post the recipe for the peanut butter ones I made!

Hee, sounds good to me! I bet there must be a ton of things to do for people like me who've never been there. I really hope we do that next year! ^__^

Oh man, these sound delicious. I'll have to try this sometime. I love making homemade goodies over just buying a bag at the store. :D
