Lemon Square Recipe
Mar. 16th, 2012 11:52 amStu and I invited his Dad and Gail over for dinner tonight, so I decide to make my mom's lemon square recipe for dessert.
I figured I should share it with you guys too while I'm at it.
Basically, this is a combination of three recipes that my mother has discovered over the years.
Ingredients
1 1/4 cup of oreo cookie crumbs
1/3 cup melted butter
8 ounces/250 grams of cream cheese
2/3 cup icing sugar
1 package of lemon pie filling
1 container of Cool Whip
Lightly butter an 8 by 8 inch or 9 by 9 inch pan. Next, you melt the butter and combine it with the oreo crumbs, press it into the bottom of the pan and set it in fridge to firm. Save a few of the crumbs to sprinkle on top for later.
Using a mixer, combine the cream cheese with the icing sugar until smooth. Next fold in 1 cup of cool whip, and save the rest for topping. Spread cream cheese icing onto oreo cookie base and put back into fridge.
Now make the lemon pie filing by following the directions on the back of the box. Once filling has cooled, pour filling over the cream cheese and place back into the fridge.
After the filling is firm, take the left over cool whip and spread it over the filling and sprinkle a few oreo cookie crumbs on top.
Note: You can do the recipe without the cream cheese icing, but I just find it makes it fancier and richer. ^_~
Also, feel free to experiment with the base. In the past my family has used graham crumbs and even shortbread for the base. So, anything goes! ^_^
