Wow, I was planning on posting more this pass month, but it got unexpectedly busy. @_@
I did want to share that Stu and I just tried and we found quite yummy. Cheesy shrimp and rice casserole
Ingredients:
1 onion, chopped
1 teaspoon minced garlic
1½ pounds peeled medium shrimp
1 cup fresh mushrooms, chopped
⅓ cup chunky salsa
1½ cups shredded reduced-fat Cheddar cheese
1 tablespoon Worcestershire sauce
½ cup evaporated skimmed milk
1 bunch green onions (scallions), chopped
3 cups cooked rice
Directions:
1. In a large nonstick skillet, sauté the onion, garlic, shrimp and mushrooms over medium-high heat for 5 to 7 minutes. Add the salsa, cheese, Worcestershire sauce, milk and green onions. Stir in the rice, and cook until cheese is melted and well combined, about 10 minutes. Serve.
Serves 6

It's a good recipe and is only about 300 calories per serving. Course, it wouldn't be great for people that are allergic/don't like shrimp, but I can't see why you couldn't substitute chicken for the shrimp.
Nano is also starting soon, while I'm not planning a whole novel I thought I might just try to finally finish my steampunk novel. I have no clue if I will succeed, but I figured it was worth a try.
